My obsession with delicata squash is REAL. It all started last fall when I wanted to change it up from my usual acorn squash habit. This stuff is so good and has such a naturally sweet taste to it. Delicata reminds me a lot of sweet potatoes, so if you like those then you need to try these asap.
The pancake recipe came to me one Sunday morning when we were out of sweet potatoes and I wanted to make one of my favorite sweet potato pancake recipes. We had one delicata squash leftover from the week so I gave it a try. SO good!
My favorite part about this recipe is that there's no added sugar at all! Yet they still taste sweet from the delicata squash. Also snuck some collagen peptides in there for extra protein.
And do yourself a favor and make sure you have coconut butter on hand for the drizzle because it just makes it that much better! Get creative with your other toppings - berries, paleo granola, banana, options are endless!
