This recipe was inspired by Jeannette from @shutthekaleup - if you don't follow her on Insta, go do it now! By far one of my favorite pages. These chicken tenders are the perfect alternative to the unhealthy fast food or freezer section options. And seriously SO easy to make!
And the best part is that these are sure to be picky-eater approved - kids and husbands included! They are amazing dipped in a mustard sauce, but feel free to get creative (pictured above is Sir Kensington's Chipotle mayo).
You can eat these as part of a big salad, veggie bowl, on its own dipped in sauce, wrap it in a grain free tortilla or lettuce wrap, options are endless! Also, feel free to get creative with what crackers you buy. I love Simple Mills brand since they're almond & cassava flour based (100% grain and gluten free!). In these pictures, I used their Sun-Dried Tomato & Basil Almond Flour Crackers, but any flavor would be great!
