Steak Tips Veggie Stir Fry

Happy December! A few days late, but this is my first post of December on megtrition.com and I'm still just loving the holiday season. Planning a really fun Christmas cookie week soon so stay tuned for that yummy goodness, but until then I'm working hard to get more lunch/dinner meals posted on here for you guys! I definitely lean towards baking when I'm creating recipe content to share, but I want you all to know that creating healthy main dishes are just as easy and tasty!

 

I love to keep my main meals super simple. Usually a good quality protein source (organic chicken, grass fed beef, pasture raised eggs, etc.) and then add veggies and healthy fats on the side. Example everyday meals for me are an organic chicken breast + a spinach salad topped with avocado, pumpkin seeds, micro greens, and a clean salad dressing. Another favorite is grass fed ground beef inside lettuce wraps topped with cilantro, chopped spinach, and avocado.

 

This meal, my Steak Tips Veggie Stir Fry is another one those simple meals and all in one pan! So easy and so delicious. Also incredibly good for you. I was also really excited about this last meat delivery because it included steak tips, which I had never used before and it inspired this new recipe. It cooks up wonderfully on the stove top using a cast iron skillet. Throw it in with some sautéed veggies and you have the perfect dinner.

*Note: I used this Primal Palate seasoning blend in this recipe and highly recommend it, but if you don't have it on hand you can use your desired combination of sea salt, paprika, onion powder, garlic powder, & oregano in its place (those are the ingredients of the spice blend).
