
I always forget just how amazing fresh rosemary tastes until I remember to buy it at the store again. At my grocery store, the fresh spices and herbs are in a corner that I don't often venture off to (creature of habit over here). But those fresh spices/herbs are honestly the best! And not just rosemary, fresh basil & thyme are also so delicious.
Especially this time of year around the holidays, rosemary has such a festive taste to it. It caught my eye at the grocery store last week and so I picked some up, then once my Butcher Box order arrived a couple days later with an amazing-looking pork tenderloin in there, I knew it would be a match made in heaven! And it was.
To be honest though, pork has never been one of my favorite types of meat. I definitely prefer chicken or beef over pork. However, my tastes are slowly changing after this amazing roasted rosemary pork tenderloin. It was so juicy and flavorful.
I paired mine with cauliflower rice and a big salad of greens and avocado (because when do I not put avocado on everything?). But this would also pair well with so many other things - quinoa, baked sweet potato, or roasted veggies!
