In Chicago we're coming off of a 2 week stretch of single degree weather...and that's just the "real temp," the "feels like" temp was negative most days. So needless to say, I cooked up many batches of this Slow Cooker Vegetable Beef Soup and tried to go outside as little as possible. This soup is always the perfect warming meal and SO easy. Seriously can't mess this one up.
In the summer months I usually take a break from using my slow cooker so much and then come fall/winter it takes me a few months to remember to start using this perfect meal prep machine again! Slow cookers are the best for weekend meal prep. I'll throw something in there Sunday morning and by early afternoon I have a few days of meals to bring to work for lunch or for dinner.
Since I'm all about making meal prep as easy as possible, next on my list to perfect is the use of my new instant pot/pressure cooker. I've heard such good things about them so I registered for one for my wedding and the 2 times I've used it I overcooked the meat, not good. So I've just stored it in my guest bedroom closest until I get the courage to try again ;) So if you have any recommendations for fail proof instant pot recipes, please send my way!

I get my beef stew meat from Butcher Box and I highly recommend it! If you don't want to buy their meat, always remember to look for "grass fed and finished" when buying your beef.
I use Primal Palate spices in this recipe (and many of my recipes), and while I highly recommend their spices, it's not necessary if you don't have it on hand. Their Adobo Seasoning used here is a mix of Pink Himalayan Salt, Garlic, Onion, Black Pepper, Oregano, Turmeric. You can use a combo of those spices in its place or whatever you have on hand!
Lastly, I highly recommend Bonafide Provisions for your chicken broth. You can find it in the freezer section of your favorite health food store. I think all Whole Foods carries it now and I've also heard it's in many Walmarts!
